Low Carb Chicken Parm Recipe

This is a quick low carb meal that uses shortcuts but tastes great and really helps to satisfy your craving for low carb Italian food!

Low Carb Chicken Parm Recipe

1 Package of Thin Sliced Chicken Breast (you can slice or pound out regular beasts to make them thinner but this is a time saver)

1 Tablespoon Olive Oil

1 Teaspoon Minced Garlic

2 Cups of Your Favorite No Sugar Added or Low Carb Spaghetti Sauce

2 Cups of Mozzarella Cheese

Add the Olive Oil to an oven proof skillet large enough to cook all the chicken at once. Heat the oil on medium heat making sure you do not see the oil start to smoke and add the garlic. Lightly cook the garlic for 1 to 1 ½ minutes constantly stirring making sure not to overcook the garlic. Add the chicken breast to the pan and turn the heat down to medium low to prevent the chicken from cooking to fast and drying out. Flip the chicken when the first side is golden. Take the skillet off the heat when both sides are done and turn your oven on broil. Add the sauce and cover with cheese. Place skillet on the top rack in your oven until the cheese is melted and light brown or golden. Tell me if that doesn’t smell good coming out the oven!

Now I usually eat my low carb chicken parm with an Italian salad, but it would go great with spaghetti squash or low carb pasta, depending on the type of low carb diet you are on!
